Apple Cider Mimosas

INGREDIENTS
2 tbsp. sugar
1 tbsp. ground cinnamon
1 cup apple cider
1 (750-ml.) bottle bubbly
DIRECTIONS
On a small plate, combine sugar and cinnamon. Dip champagne flutes in water to wet the rims, then dip in cinnamon sugar mixture.

1 Granny Smith apple, sliced
1 Honeycrisp apple, sliced

DIRECTIONS
Fill large pitcher with sliced fruit, then add apple cider, ginger beer, and white wine.

Hot Buttered Rum
INGREDIENTS
BUTTERED RUM BATTER
4 tbsp. butter, softened
3 tbsp. packed brown sugar
1/2 c. vanilla ice cream, softened
1/2 tsp. ground cinnamon
RUM DRINK
2 c. apple cider
1 c. rum
DIRECTIONS
Make the Buttered Rum Batter:
In a mixing bowl, beat butter and brown sugar until light and fluffy.
Beat in ice cream and cinnamon, then spoon into a mason jar or resealable container.
Store in freezer until mostly hardened, about 2 hours or until ready to serve.
Make the Drinks:
In a medium saucepan, heat cider until boiling, stirring occasionally.
Remove from heat and pour into a pitcher or easy-to-serve container.
Place about 2 tablespoons of buttered rum batter into each mug.
Fill about 1/3 of the way up with rum, then top with hot apple cider.
Stir before serving.

Virgin Mojito

INGREDIENTS
1 medium lime
1 ounce honey syrup, more to taste
10 to 15 mint leaves
4 to 6 ounces club soda
Mint sprig, for garnish
DIRECTIONS
Cut the lime into wedges (about 4 or 5), reserving one for garnish. Add the remaining wedges along with the honey syrup to a tumbler. Muddle well to release all of the lime juice.
Add the mint, tearing each leaf into smaller pieces, and muddle gently to release the herb's essence
Fill the glass with ice then sparkling water or soda. Add more honey syrup, if desired. Stir well to incorporate the lime and mint into the ice.
Garnish with the reserved lime wedge and a sprig of mint. Serve and enjoy.
Tips
To make honey syrup, mix 2 or 3 parts of honey with 1 part of water, stirring until it's an even consistency. Thinning it out helps the honey mix better into cold drinks.
If you do not have a muddler, the back of a large wooden spoon can work. You can also use a rolling pin or similar kitchen utensil with a flat end. Alternatively, squeeze the juice from the lime wedges into the glass, add the mint and syrup and stir very well after adding ice.

If you’re feeling tropical, try this island drink to chase away your study woes!
INGREDIENTS
1 1/2 cups unsweetened frozen pineapple chunks
1/4 cup ice
3/4 cup unsweetened pineapple juice
3/4 cup unsweetened coconut milk
1 to 3 tablespoons brown sugar, optional
Fresh pineapple wedges, garnish
Maraschino cherries, garnish
DIRECTIONS
Place frozen pineapple chunks and ice in a blender.
Pour pineapple juice and coconut milk over top. Add brown sugar, if using. Puree until smooth. Taste to test the sweetness and add more sugar, if needed.
Pour into glasses and garnish with fresh pineapple wedges or a maraschino cherry.
Tips
Chill the glasses while blending the drink: Fill them with crushed ice or ice water, then empty the glasses before pouring the piña coladas.
For easy cleanup, rinse the blender with hot water immediately so the sugars don't solidify and get sticky. You can also place the rinsed pitcher in the dishwasher or add a bit of soap and hot water to the pitcher, give it a whirl on the blender base, then rinse it out.
When using fresh pineapple, you will want to add more ice. Freeze any extra chunks to make piña coladas in the future.
Coconut milk comes in the traditional canned variety and cartons designed as a dairy alternative to milk. Either type works for drinks, though canned coconut milk creates a richer drink. If you're feeling adventurous, extract milk from a fresh coconut.
Shake canned coconut milk before opening it because it likes to separate.

4 to 6 ounces orange juice

Tips
This is one drink that definitely deserves fresh-squeezed orange juice. It's not hard to do with either an electric juicer or a simple hand juicer. Two average-sized oranges should be more than enough to make one drink. You can also juice up a bunch of oranges and store any excess in the refrigerator to make the next drink that much easier.
Grenadine is a sweet, delicious syrup flavored with pomegranate, and it's used for a variety of drinks. It's also very easy to make grenadine at home. You can use fresh pomegranate during the winter when the fruit is in season or pomegranate juice any time of the year. Grenadine can last for a few weeks in the refrigerator.
Make it up ahead of time in a pitcher for larger portions. Just add grenadine into each glass before serving.

7 ounces hot tea

DIRECTIONS
In a warm Irish coffee glass or mug, add the honey, lemon juice, and spices.
Top with hot, freshly brewed tea.

Tips
While waiting for your tea to brew, pour the extra water from your teapot into the glass or mug you will be using. This warms up the mug and keeps your toddy hot longer. Dump the water before building the drink
Be sure to adjust the honey and lemon to your taste. You might even find that your preferences change based on the type of tea you're brewing.
If you have whole spices—particularly the cloves, which are most often whole—you can contain them in your mug by placing them in a tea ball or similar strainer. You can also skip the ground cinnamon and use a whole stick instead. It doubles as a stir stick!
Add other spices as you see fit. Ginger is a great addition when you have a cold and can be added in ground, paste, or sliced form. Allspice, anise, and vanilla (part of a bean or a dash of extract) are good options as well. Essentially, anything you would put into a mulled wine or hot apple cider works great in a toddy.
