Friday Peruvian Cooking Class!

At the end of the week, we all need some time to unwind. Join the Galvans @ 6PM for a virtual Peruvian Cooking Class! It only takes a few easy ingredients!


On the menu: Peruvian Ceviche and a national Peruvian drink, a Pisco Sour

What you'll need:


For the ceviche:

  • 1 lb of your pick of fish, recommended are Amberjack, Flounder, Halibut, or the friendly tilapia

  • 10 Limes, 20 if using key lime

  • Salt

  • Pepper

  • 1 Red onion

  • 1 tsp of cumin

  • 2 Garlic cloves

  • 2 Aji Amarillos (yellow Peruvian chili pepper), may substitute with a combination of jalapenos and small sweet peppers

  • 1 tsp of minced ginger

  • Oil

Garnish:

  • 1 Sweet potato

  • ½ cup of corn kernels cooked

  • Green leaf lettuce


Drink: Pisco Sour

* If you don’t have Pisco, you can use rum or tequila

(also if the egg white freaks you out, you can omit that as well!)

  • 2 ounces pisco

  • 1 ounce lime juice, freshly squeezed

  • 1/2 ounce simple syrup

  • 1 egg white

  • Garnish: Angostura bitters

  • Steps:

    • Add pisco, lime juice, simple syrup and egg white into a shaker and dry-shake (without ice) vigorously.

    • Add ice and shake again until well-chilled.

    • Strain into a chilled Nick & Nora glass. (Alternatively, you can strain it into a rocks glass over fresh ice.)

    • Garnish with 3 to 5 drops of Angostura bitters. Using a straw, toothpick or similar implement, swirl the bitters into a simple design, if desired.
