What you'll need:
For the ceviche:
1 lb of your pick of fish, recommended are Amberjack, Flounder, Halibut, or the friendly tilapia
10 Limes, 20 if using key lime
Salt
Pepper
1 Red onion
1 tsp of cumin
2 Garlic cloves
2 Aji Amarillos (yellow Peruvian chili pepper), may substitute with a combination of jalapenos and small sweet peppers
1 tsp of minced ginger
Oil
Garnish:
1 Sweet potato
½ cup of corn kernels cooked
Green leaf lettuce
Drink: Pisco Sour
* If you don’t have Pisco, you can use rum or tequila
(also if the egg white freaks you out, you can omit that as well!)
2 ounces pisco
1 ounce lime juice, freshly squeezed
1/2 ounce simple syrup
1 egg white
Garnish: Angostura bitters
Steps:
Add pisco, lime juice, simple syrup and egg white into a shaker and dry-shake (without ice) vigorously.
Add ice and shake again until well-chilled.
Strain into a chilled Nick & Nora glass. (Alternatively, you can strain it into a rocks glass over fresh ice.)
Garnish with 3 to 5 drops of Angostura bitters. Using a straw, toothpick or similar implement, swirl the bitters into a simple design, if desired.
Hope to see you all on Friday!!
